The defender debuted in 2009, playing six games for Geelong and winning their best and fairest award but failed to play a match the next year. He added just two more games in 2011, and despite interest in a trade from Hawthorn he was retained by the Cats. After five more games in a VFL premiership in 2012 he was delisted.

Gillies then joined Melbourne on a one delisted free agent year contract after training with them during the off-season, but only played two senior games in his career with the Demons.

He debuted in the first game of the season, but after two matches as a key defender in which the Demons had an average losing margin of 113.5 points he was dropped and never returned. Despite a late conversion to playing as a forward for the Casey Demons Gillies was delisted at the conclusion of his first year with the club.

He joined Geelong Football League side St Mary's for the 2014 season, where he remained through the end of 2018 before joining Bannockburn.
