Overlooked in drafts after playing Under 18s, Jolly established himself at senior level with the North Ballarat VFL side and was offered a spot on Melbourne's rookie list after a recommendation from his coach Peter Somerville to Danny Corcoran. Jolly was initially hesitant to join Melbourne as he was in the middle of an apprenticeship in joinery but chose to take the opportunity.

Jolly was promoted to the senior list during the 2001 pre-season as a replacement for knee injury victim Daniel Breese, and played four of the first six games before spending the rest of the season playing VFL with Sandringham. Jolly developed further in 2002 as a backup to Jeff White, and played another 19 games in 2003.

2004 was a disappointing season, injuring his knee in Round 3 and only returning for four games late in the season. Forever in the shadow of White, Jolly requested a trade at the end of the season. He was swapped to Sydney for draft pick #15, which Melbourne used to select Lynden Dunn.

At Sydney, Jolly soon became one of the premium big-men of the competition, playing in a premiership at the end of his first season with the Swans. After winning multiple All Australian honours he requested a trade back to a Victorian based club at the end of 2009. Finding himself at Collingwood, Jolly again ended his first season at a new club as a premiership player. He joined Martin Pike as the only player to win two premierships at other clubs after leaving Melbourne.

Jolly also played in Collingwood's losing 2011 Grand Final. He was delisted at the end of the 2013 season and later appeared on TV reality show The Block.
